Easy Grain & Dairy Free Pita Bread

I’ve been craving Greek food lately, and the first thing that comes to mind for me is gyros. So I started looking for a dairy & grain free pita recipe. This adaptation turned out great!
✅ 2 cups arrowroot flour
✅ 1/2 cup almond flour
✅ 1/2 tsp Himalayan Pink Salt
✅ 2 eggs
✅ 3/4 cup unsweetened almond milk (I use @malkorganics)
✅ Olive Oil for greasing the pan
1. Heat a medium pan over medium heat and add olive oil.
2. In a large mixing bowl, combine all the dry ingredients.
3. Add the almond milk and eggs and stir together until combined.
4. Pour 1/2 a cup of the batter onto the pan, cook for 3 minutes, flip and cook an additional 3 minutes. Use right away.
These fold nicely and make a great “gyro”!
