Homemade Greek “Gyros” 🇬🇷

These homemade “gyros” really hit the spot!! Will make again!

(makes 4 “gyros”)
✅ 4 Pitas (see last post for recipe!)
✅ About 600g of Chicken (breasts or thighs)
✅ 1 Garlic Clove, minced
✅ 3 Tbsp Olive Oil
✅ 1 Tbsp Paprika
✅ 1 tsp Oregano
✅ 1/2 tsp Onion Powder
✅ Salt & Pepper
✅ Fillings: You can use whatever you have on hand. This time I used arugula, green onion, cucumber, and homemade Tzatziki (recipe here)
1. Preheat oven to 480°F.
2. In a small bowl, add the chicken, olive oil, paprika, oregano, and onion powder. Season with salt and pepper. Combine well, massaging the spices into the chicken.
3. Place coated chicken into a small baking dish and and bake for 20min, flipping halfway through. Check that chicken is cooked all the way through before removing from oven.
4. Transfer cooked chicken to a cutting board and cut into thin strips.
5. Assemble the “gyros”: take a homemade grain and dairy free pita and spread some vegan Tzatziki on the middle. Top with chicken and desired fillings. Provide extra Tzatziki for dipping!
