No Bake Pumpkin Pie Squares!⁣

These are a super easy and delicious fall dessert. If, like me, you love all the pumpkin things, these really hit the spot! 🎃 🎃⁣
⁣
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦 ⁣
⁣
𝘽𝙖𝙨𝙚 𝙇𝙖𝙮𝙚𝙧 ⁣
✅ 1 cup Dates pitted, soaked in water for 20 minutes and drained⁣
✅ 1 cup Walnuts⁣
✅ 1 Tbsp Coconut Manna⁣
✅ 2 Tbsp unsweetened Coconut Flakes⁣
⁣
𝙏𝙤𝙥 𝙇𝙖𝙮𝙚𝙧 ⁣
✅ 1 cup Cashews, soaked in water 20 minutes and drained⁣
✅ 1/2 cup Pumpkin Puree⁣
✅ 1/2 tsp Vanilla ⁣
✅ 1 tsp Cinnamon⁣
✅ 1/2 tsp Ginger⁣
✅ 1/4 tsp Nutmeg⁣
⁣
𝙏𝙤𝙥𝙥𝙞𝙣𝙜𝙨 ⁣
✅ 2 Tbsp unsweetened Coconut Flakes⁣
✅ 2 Tbsp Pumpkin Seeds (optional)⁣
⁣

𝗠𝗘𝗧𝗛𝗢𝗗⁣
⁣
1. Soak the dates and the cashews (separately) for 20min then drain.⁣
2. Add all the base layer ingredients to a high powered blender or food processor and blend until combined. ⁣
3. Press the mixture out into an 8.5” square baking dish spreading it out evenly to create a base. ⁣
4. Add all the ingredients for the top layer into the blender or food processor and mix until smooth. Spread evenly over the base. ⁣
5. Top with desired toppings and freeze over night or at least 2-3 hours. Then cut into squares and serve. (These are best served frozen). ⁣
