Since it was just the two of us this year, I did not want to make a turkey (Iโ€™ll be honest, I have yet to cook a turkey in my life!). So I had the idea of making a turkey casserole with some ground turkey. โฃ

โœ… 1 Tbsp Olive Oilโฃ
โœ… 1 Onion, choppedโฃ
โœ… 2 Garlic Cloves, minced โฃ
โœ… 1 cup Sliced Mushrooms โฃ
โœ… 1 small Celeriac
โœ… 2 Tbsp Coconut Aminosโฃ
โœ… 1 cup Organic Chicken Brothโฃ
โœ… 1/2 tsp Sea Saltโฃ
โœ… 1/4 tsp Pepperโฃ

โœ… 800g Ground Turkey (1/2 white meat & 1/2 dark meat)โฃ
โœ… 2 med Carrots, dicedโฃ
โœ… 1 Tbsp Italian Seasoningโฃ
โœ… Gravyโฃ
โœ… Salt & Pepper to tasteโฃ

โœ… 5 cups Riced Cauliflower (frozen or fresh)โฃ
โœ… 2 Tbsp Coconut Oil โฃ
โœ… 1 1/2 cups Stale Grain Free Bread, diced (I used @homegrownlivingfoods U-Bake Pumpkin Chia Keto Bread)โฃ
โœ… 2 Tbsp Coconut Oilโฃ
โœ… 1 small Onion, chopped โฃ
โœ… 1 stalk Celery, finely chopped โฃ
โœ… 1 small Apple, peeled & diced โฃ
โœ… 1 sugar free Sausage, casing removed โฃ
โœ… 1/4 cup chopped Cranberries โฃ
โœ… 2 Tbsp Italian Parsley, chopped โฃ

1. Heat oil in a large skillet over medium heat. Sautรฉ the onion and garlic until soft. โฃ
2. Add the mushrooms, celeriac, coconut aminos, and water. Bring to a boil. โฃ
3. Reduce heat and simmer, covered, until the celeriac is fork-tender, about 10min. โฃ
4. Carefully transfer the contents of the pan to a blender, add the salt/pepper, and blend till smooth.โฃ
6. Adjust the consistency as needed by slowly adding more chicken broth or water. 
7. Reserve 1 cup of the gravy for topping and set the rest aside.โฃ

๐™๐™ช๐™ง๐™ ๐™š๐™ฎ ๐™‡๐™–๐™ฎ๐™š๐™ง:โฃ
1. Add the turkey to a large pan on medium heat and break it up with a spatula. โฃ
2. Add the carrots and seasoning. Brown the turkey until it is cooked through and the carrots are soft, about 12min. โฃ
3. Stir in the gravy and combine well. Set aside. โฃ

๐™Ž๐™ฉ๐™ช๐™›๐™›๐™ž๐™ฃ๐™œ ๐™‡๐™–๐™ฎ๐™š๐™ง: โฃ
1. Cook the cauliflower rice and set aside. โฃ
โฃ2. Heat 2 Tbsp coconut oil in a large pan over medium heat, add the diced bread and cook until browned. Set aside. โฃ
โฃ3. In the same pan, add the second two Tbsp of coconut oil and cook the onion and celery until translucent. โฃ
โฃ4. Add the apple, sausage, and cranberries. Cook until the sausage is browned. โฃ
โฃ5. Stir in the cauliflower rice, bread, and parsley. โฃ
โฃ6. Adjust the seasoning to your liking.

๐™๐™–๐™ช๐™ญ-๐™ˆ๐™–๐™จ๐™โฃ:โฃ
1. Fill a medium pot, fitted with a steamer basket, with 3in of water and bring to a boil (If you don’t have a steamer, you can boil it). Steam for 10-15min, until fork tender. โฃ
2. Place in a blender with coconut oil & salt. Pulse the celeriac into a mash. โฃ

1. In a 2qt casserole dish, add the turkey, followed by the stuffing, then mash. โฃ
2. Bake for 15-20min or until heated through. โฃ
3. Serve with remaining gravy on top!โฃ
