Vegan Béchamel Sauce

I posted this recipe as part of my Moussaka recipe, but decided it deserves a post of its own! It is THAT good!
Also makes a great Fish Pie or Lasagna!
✅ 1 med Celeriac (Celery Root), peeled and diced into 1in cubes.
✅ 1 cup Coconut Cream (try to avoid the liquid in the can)
✅ 1/4 cup Water
✅ 3 Tbsp Nutritional Yeast
✅ 1 Tbsp Arrowroot Powder
✅ 1 clove of Garlic, minced
✅ 1 tsp Sea Salt
1. Fill a med pot with 3in of water and fit with steamer basket, bring to a boil. Add cubed celeriac and steam for 10-15min until fork tender.
2. In a small bowl, add the water and arrowroot powder. Stir until combined.
3. Add all the ingredients to a high speed blender and blend until smooth.
4. Adjust seasoning as required.
