Vegan Tzatziki

This goes perfectly with the homemade “gyros”! Can’t have gyros without Tzatziki!⁣

INGREDIENTS

✅ 3/4 cup Cashews, raw & ethically sourced⁣
✅ 1 large Cucumber🥒, peeled & grated ⁣
✅ 1/2 tsp Sea Salt⁣
✅ 3 Cloves of Garlic, minced 🧄⁣
✅ 2 Tbsp Fresh Lemon Juice 🍋⁣
✅ 1 Tbsp Fresh Dill ⁣
✅ Pinch of Black Pepper⁣
✅ 1/2 cup Fresh Filtered Water 💦⁣

METHOD

1. Soak cashews in boiling water for 10min.⁣
2. Place the shredded cucumber in a mesh sieve, sprinkle with salt and leave to drain for 10min. After 10min, squeeze the cucumber to get as much of the water out as possible and set aside. ⁣
3. Add drained cashews to a blender or food processor with the garlic, lemon juice, dill, black pepper, and water. Blend until completely smooth. Transfer to a small bowl. ⁣
4. Add cucumber to the bowl with the cashews and mix everything together to ensure its well combined. Taste and add more lemon, dill, salt, or pepper as desired. ⁣
