This goes perfectly with the homemade “gyros”! Can’t have gyros without Tzatziki!
✅ 3/4 cup Cashews, raw & ethically sourced
✅ 1 large Cucumber🥒, peeled & grated
✅ 1/2 tsp Sea Salt
✅ 3 Cloves of Garlic, minced 🧄
✅ 2 Tbsp Fresh Lemon Juice 🍋
✅ 1 Tbsp Fresh Dill
✅ Pinch of Black Pepper
✅ 1/2 cup Fresh Filtered Water 💦
1. Soak cashews in boiling water for 10min.
2. Place the shredded cucumber in a mesh sieve, sprinkle with salt and leave to drain for 10min. After 10min, squeeze the cucumber to get as much of the water out as possible and set aside.
3. Add drained cashews to a blender or food processor with the garlic, lemon juice, dill, black pepper, and water. Blend until completely smooth. Transfer to a small bowl.
4. Add cucumber to the bowl with the cashews and mix everything together to ensure its well combined. Taste and add more lemon, dill, salt, or pepper as desired.
