Quick and Easy Veggie Fried Cauliflower Rice!

As a high school teacher, I have been so busy lately any nervous system is just starting to come down a few days into spring break. ⁣

Therefore, I’ve been making a lot of quick meals. This fried cauliflower quick and easy fried rice recipe has been a frequent one! I use whatever veggies I have. Sometimes I add chicken or shrimp. Enjoy! ⁣


𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦⁣

✅ Cauliflower Rice (I use a bag of frozen but a head of fresh works too)⁣
✅ 2-3 Carrots, diced
✅ Head Broccoli⁣, chopped
✅ 1 Garlic Clove, minced ⁣
✅ 2 Tbsp Coconut Aminos⁣
✅ 1 Tbsp Fish Sauce⁣
✅ 1 Egg⁣
✅ Salt & Pepper to taste ⁣

𝗠𝗘𝗧𝗛𝗢𝗗⁣

1. Cook all veggies together until just soft⁣. 
2. Add coconut aminos, fish sauce, and egg. ⁣
3. Mix together until the egg is all cooked, season with salt and pepper, and serve. ⁣

*If I use chicken or shrimp I cook that separate and add it in with the egg. ⁣
