As a high school teacher, I have been so busy lately any nervous system is just starting to come down a few days into spring break.
Therefore, I’ve been making a lot of quick meals. This fried cauliflower quick and easy fried rice recipe has been a frequent one! I use whatever veggies I have. Sometimes I add chicken or shrimp. Enjoy!
𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
✅ Cauliflower Rice (I use a bag of frozen but a head of fresh works too)
✅ 2-3 Carrots, diced
✅ Head Broccoli, chopped
✅ 1 Garlic Clove, minced
✅ 2 Tbsp Coconut Aminos
✅ 1 Tbsp Fish Sauce
✅ 1 Egg
✅ Salt & Pepper to taste
𝗠𝗘𝗧𝗛𝗢𝗗
1. Cook all veggies together until just soft.
2. Add coconut aminos, fish sauce, and egg.
3. Mix together until the egg is all cooked, season with salt and pepper, and serve.
*If I use chicken or shrimp I cook that separate and add it in with the egg.
